Strawberry Lemonade Scones!

     I'm FINALLY getting around to posting these! These are soooooooo good! Sorry for the bad photo quality, it was dark and my camera is pretty much spent. I'm hoping to eventually get a new one! I post a lot on my Instagram and am almost up to 100 followers! Thanks so much! I don't really have a lot to say.. We got some chickens so soon I'll have organic eggs instead of the store bought ones, I have learned a lot about conventionally raised eggs, in fact I wrote a whole paper on it. Annyywayyyy these scones! They are super good! I based the recipe off Clean and Delicious, with Dani Spies! It's super delicious!


Strawberry Lemonade Scones

1 1/2 cups whole wheat flour
1/2 cup oat flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/4 cup raw sugar
1 cup & 2 tbsp. milk
1 cup chopped strawberries
1 tsp. lemon extract
Optional: about 1 tbsp oat flour for top

     Pre-heat to 400 degrees. Combine all dry ingredients. Mix in milk and extract, until just combined and add strawberries just until mixed in. The dough will be super sticky so just spread it out on floured parchment paper, and bake for 18-20 minutes. Enjoy!

Meal Plan Ideas + Tuna Cake Recipe!

     If any of y'all follow me on my Instagram, you might have seen today I posted about trying to create a meal plan that is affordable, but still healthy! I have *kinda* followed blogilates meal plan, but some of the stuff I don't really like. My goal is to spend $5o on groceries a week and the plan will feed 2 people! I can totally do this! Since I don't have a recipe to post enjoy these pics from my Instagram! If you haven't checked it out and followed please do!

I guess I do have a recipe! Super simple! 

Tuna Cakes
1 whole egg
1 pack of tuna (6 oz)
2 tbsp. flour (or oats)
1/4 cup mozzerella cheese

     Mix all ingredients together in small bowl. Shape into 6 patties. Spray skillet with olive oil. Add patties and cook each side on medium high heat, about 5 minutes. Enjoy! 

Note - The longer you cook the patties the milder they will be. You know how the taste of tuna is kinda... wild? Well cooking tuna takes that taste away. I prefer mine very mild, that's why my tuna cake is a little burnt.


This is turkey-avocado protein bowl! Only 4 ingredients! 

Turkey-Avocado Protein Bowl
1/4 avocado
1/2 cup black beans
4 0z. cooked ground turkey
1/2 cup rice uncooked

     Cook rice according to directions on package. Mix beans turkey and rice together. Add sliced avocado on top!

I'm a Slacker...

     So guys... I have been slacking off a lot over the past couple weeks with my blogging.... I have soooooooo much math to do. Anyway I was at a youth retreat this weekend I had the BEST time ever! It was just so amazing! It definitely brought me closer to God! Anyway I started Blogilates meal plan a couple weeks ago! I was super excited, the first week I lost 6 lbs! It sounds like a lot but it was mostly water weight, it'll take longer for the rest to come off. I probably gained some of it back though. The retreat was amazing but unfortunately I couldn't make wise food choices. I don't know if we have the groceries to start again tomorrow so I am going to try to eat as healthy as possible. I HIGHLY recommend you check out blogilates! I really love it! Y'all have a great day!

I'm Sorry

     I'm sorry... I know I haven't been blogging like I should. I really need to do better. On the bright side, I think I might start Blogilates 12 week meal plan! I finally got it all printed off.... I think I am going to start with the beginner work out plan, because her videos are soooooo hard! The thing is I have a sinus infection or cold, not really sure which. The problem is you're not really supposed to work out when you're sick. Fantastical. Did y'all know that's actually a word???? I do now!!! I don't think I used it right haha. Anyway hopefully next week I'll feel better and start the meal plan and work out! I am super-duper excited!!!!!

Spinach Fruit Salad

     A lot has happened in my horsey life lately. We're considering getting another horse soon, since I won't get to show in 4-H if we don't. The thing is she's 24.... She's a bay and apparently a great show horse! {I say apparently because I haven't actually seen her} I rode Lance the other day. He sure has a lot of go for an old horse! He wanted to trot when I told him to walk and canter when we were trotting. Oh my we are gonna have to work on him for the pleasure classes... His new saddle doesn't exactly fit the way it should. I am probably going to buy an English saddle soon. We missed the first practice for horse and pony because we don't have a trailer. We will miss another horse and pony meeting because of testing. The week after that we should be getting our trailer. I am really worried about the English classes I will be entering because they show just how great of a rider I'm not. On the bright side I will have breeches I can wear when riding!!! Anywho we can get back to the salad.


     This is a salad I could eat again and again and again... I'm sure you get my point. Plus it has TONS of nutrients loaded in it! Yeah I used cheese. It's 2% sharp cheddar. I love sharp cheddar cheese. You could totally leave it off if you're vegan, or just don't want it on there. Low sodium almonds add a great crunch to the salad and boy oh boy, it just adds to the greatness of the salad... I use organic spinach because apparently there is a lot of pesticides used to keep bugs off, and I don't want to eat stuff that kills bugs. Something you may not know is I don't have a health food store where I regularly shop. All of our food generally comes from Wal-Mart or Aldi. We don't buy organic food usually though I wish we could. Aldi is beginning to carry more and more health foods and I'm super-duper excited! The other day I was able to get some Organic Agave. They also now have a small selection of organic veggies! Maybe I could do a post on what I usually buy from the grocery store...


Spinach Fruit Salad

1-2 cups spinach
2-3 strawberries, sliced
2 tbsp. low sodium almonds
1 cutie {mandarin, or clementine}, segmented
2% sharp cheddar cheese, shredded
1 small apple, thinly sliced 

Slice all fruit. Lay spinach on plate add apple, strawberries and clementine. Add cheese and almonds.
