A lot has happened in my horsey life lately. We're considering getting another horse soon, since I won't get to show in 4-H if we don't. The thing is she's 24.... She's a bay and apparently a great show horse! {I say apparently because I haven't actually seen her} I rode Lance the other day. He sure has a lot of go for an old horse! He wanted to trot when I told him to walk and canter when we were trotting. Oh my we are gonna have to work on him for the pleasure classes... His new saddle doesn't exactly fit the way it should. I am probably going to buy an English saddle soon. We missed the first practice for horse and pony because we don't have a trailer. We will miss another horse and pony meeting because of testing. The week after that we should be getting our trailer. I am really worried about the English classes I will be entering because they show just how great of a rider I'm not. On the bright side I will have breeches I can wear when riding!!! Anywho we can get back to the salad.
This is a salad I could eat again and again and again... I'm sure you get my point. Plus it has TONS of nutrients loaded in it! Yeah I used cheese. It's 2% sharp cheddar. I love sharp cheddar cheese. You could totally leave it off if you're vegan, or just don't want it on there. Low sodium almonds add a great crunch to the salad and boy oh boy, it just adds to the greatness of the salad... I use organic spinach because apparently there is a lot of pesticides used to keep bugs off, and I don't want to eat stuff that kills bugs. Something you may not know is I don't have a health food store where I regularly shop. All of our food generally comes from Wal-Mart or Aldi. We don't buy organic food usually though I wish we could. Aldi is beginning to carry more and more health foods and I'm super-duper excited! The other day I was able to get some Organic Agave. They also now have a small selection of organic veggies! Maybe I could do a post on what I usually buy from the grocery store...
Spinach Fruit Salad
1-2 cups spinach
2-3 strawberries, sliced
2 tbsp. low sodium almonds
1 cutie {mandarin, or clementine}, segmented
2% sharp cheddar cheese, shredded
1 small apple, thinly sliced
Slice all fruit. Lay spinach on plate add apple, strawberries and clementine. Add cheese and almonds.
